The Ultimate Cookie Recipe

It’s been a while since I last posted about food here. I don’t bake as much as I used to, and that’s definitely something I want to change. Yesterday, I really felt like making cookies (I hadn’t made them in so long !) and so, even though my mum just bought us a lot of snacks, including cookies, I decided to make my own – to make them just the way I like them. I thought I’d share my recipe with you so you could try them out ! I didn’t end up with a lot of them, but that’s because I made some HUGE ones, so keep in mind that the balls of dough need to be tiny, even if you think the cookies will end up too small – they won’t, trust me haha.

You will need :

95g of butter

90g of brown suger

2 medium eggs

150g  of flour

5g of baking powder

1 pinch of salt

25g of white chocolate chips

25g of milk chocolate / dark choc chips

The Ultimate Cookie Recipe

Recipe :

Mix the brown sugar with the butter (leave it at room temperature before you begin the recipe, so it’s not as hard). Add the eggs and mix it all together.

Add the flour, the baking powder, the salt and mix it all together. Once it’s more of a compact dough, add the chocolate chips and mix again.

Leave in the refrigirator for an hour.

Preheat the oven to 180°C

Get the dough out of the refrigerator and prepare as many baking tray as you think you’ll need, covered with baking paper.

With your hands, form little balls of dough and put them on the baking tray, leaving a bit of space between each of them, as they will take more space when they are baking.

Put your baking trays in the oven and bake for about 10 minutes.

Let them cool off so they can harden a bit.

An Evening with Friends

Recipes for an evening with friends

My parents and sister leaving my brother and I home alone, I decided it would be a perfect opportunity to invite my group of friends over so we could catch up – especially since most of them had never seen my place before. I was so excited to have people over – I rarely do it since it makes me really anxious – that I spent my the entire day in the kitchen to make sure I’d have something for everybody. I thought I’d share the recipes I used (minus a ham & cheese cake who was a huge success but I forgot to include… Maybe another time ;)), even though my banana bread was quite weird. I’m sure it was my fault and you’ll be better at this than I am 😉

Recipes for an evening with friends

Guacamole (served with Doritos) – recipe from Les Meilleures recettes de Marmiton, Fait Maison

You will need :

3 advanced avocados

3 green peppers

1 lemon

Recipe :

Peel the avocados and mash them.

Take the seeds off the peppers and chop them as much as you can.

In a mixing bowl, mix the mashed avocados with the peppers. Add a bit of salt and juice from hald a lemon.

Note : Depending on how spicy you want your guacamole to be, taste it before adding all the peppers – mine was really spicy haha

Vegan banana bread (recipe from auvertaveclili.fr)

You will need :

4 bananas

150g of flour

100g of blond sugar

40g of vegetable oil

2 big spoons of almond milk

1 spoon of food baking

1 spoon of rising flour

Recipe :

Heat your oven at 180°

Put the sugar and oil in a mixing bowl and mix it together.

Add the crushed bananas and mix again.

Add the flour, rising flour, food baking, a pinch of salt and almond milk. Mix until you get a good texture.

Put it in the oven for 45 minutes.

Baked potatoes with cured ham and chive

It’s been a while since I last posted about food, which is definitely weird given that I’m eating all the time and can’t seem to get enough. Unfortunately, my parents rarely let me cook for some reason, which makes me more of a baker than a cooker. Luckily for me, my dad wasn’t at home this week and my mum put me in charge of the cooking for me and my brother for the week. Obviously, I need more practice to get better but I have to say that my tagliatelle carbonara were amazing and so was the recipe I’m gonna share with you today.

For the recipes, I used a cooking book my mum bought for me in September called « Cuisine de l’étudiant » (« The student’s cooking/kitchen », I don’t know the correct translation for you because it can mean both of those things) by the Mango editions which you can see in some of the pictures. We thought it was gonna be filled with recipes for one or two people but it turned out to be for about 6 persons everytime, with easy and cheap recipes, which is always useful.

I thought I’d share this particular recipe as it’s probably the easiest I used this week and it’s quite different than what I normally eat. Obviously, I’m gonna tell you the recipe for two persons, as it’s the way I made it but it’s still easy for you to calculate how much you’ll need for four or six persons for example 🙂

YOU WILL NEED :

6 small potatoes (or 4 medium ones)

10 cl of heavy cream

6 chopped chives

2 slices of cured ham (or more, given how much of it you want, this one is up to you ;))

Preaheat the oven to 200°C

Wash and wipe the potatoes. Wrap them seperately in aluminium foil and put them on the baking tray. Put them in the oven for about 40 minutes.

Remove the aluminium foil. Cut carefully a bit of the top part of the potatoes. Remove the skin of what you just cut off and crush it in a salad bowl and mix it with the heavy cream and the chive. Add salt and pepper. Put the preparation on the potatoes.

Cut the cured ham in small pieces. Add them on top of the preparation you put on the potatoes.

You can put the final result on back in the oven for 5 minutes but I decided not to, in order to keep the preparation cold on top of the hot potatoes. It can look quite weird but I promise you, it’s delicious !

Winter Essentials

December is here, and even though I’m not a fan of this cold season, I have to admit that the only reason why I don’t like it is that I have to go to school anyway, because let’s be honest, I do love it during the holidays. And most importantly, December is one of my favorite month because we finally get to celebrate Christmas. Yes, I am one of those crazy Christmas fanatic, and I am not ashamed of it. And because I love Christmas, I thought I would share some of my favorite things about Winter, for the days I just stay home under my blanket and just enjoy how comfy this time of year is.

Comfy clothes. Because how can you enjoy a comfy day home when you are not feeling comfy yourself? These items are definitely the items I wear the most throughout the season. They make me feel so warm and soft, I don’t think you could go wrong with them. I was so obsessed with the leggings that I bought them way oversized simply because it was the only size available and there was no way I’d go home without them. They definitely look a lot more Christmasy than the socks, I need to find some Christmas themed socks but the colors still fit the season so it doesn’t really matter. Everything came from Primark so it’s definitely affordable for anyone who wants the same type of clothing items !

What would Christmas be without its legendary music? They instantly make you feel so much more festive, whether you listen to some songs which will make you dance around the house or just calm you down. I have so many favorite songs, I don’t think I could decide which one I love the most among them. I recently bought these four CDs in a pack, containing a CD with classic songs such as Jingle Bells or Have Yourself A Merry Christmas, another one with choirs which I will mostly be using during Christmas diner or times like that, one with Gospel music and finally Sacred Chants. I found it absolutely perfect because it has so many different songs and each CDs has its own kind of ambiance. Plus, it was only 10€ for 80 songs so I definitely thought it was worth buying. Of course these aren’t the only Christmas CDs I own or just listen to but they were the ones I thought would cover the entire kind of Christmas songs.20151213_113825

Is there anything better than a good book next to the fire with a hot drink in your hands? Well, not in my opinion. Because I study literature, I have a lot of books to read for my classes and find myself struggling to read something I chose to read for my own enjoyment, even though I do enjoy most of the books I have been studying. But this time of the year is my favorite when it comes to just relax and reading is probably the thing I do that relaxes me the most, so I’ll never say no to a good book. I actually don’t own much winter books such as ‘The Snow Child’ in the pic above but I really intend to change it because I really enjoyed it when I read this book. So if you have any suggestions of books you would consider good for winter, please let me know !

Another thing I really enjoy doing at this time of the year during my free time is watching a good Christmas movie. There are so many of them, whether it’s romantic comedy, comedy, cartoon, you only have to pick. I just find Christmas movies to be so great because no matter what, they always have a happy ending and will just fill your heart with joy. And even though it might not snow wherever you live, you can be sure it will in these movies, so just close the curtains and pretend it’s the same outside ! I included three of my favorites Christmas movies of all time but of course these aren’t the only ones I enjoy, trust me ! So get your blanket, your hot drinks and some snacks and just enjoy a good movie !

Speaking of snacks, winter is probably the best time to eat lots of chocolate without feeling as guilty as you usually do -even though let’s be honest, I never really feel guilty when it comes to chocolate. If you feel a bit down, chocolate is known to be a good way to improve your mood but even if you don’t feel that way, there isn’t a good enough reason to stop you from eating some. My cousins living in Germany came to visit last week and because Saint Nicolas is celebrated where they live, they came bringing a bag full of chocolates for each of us and I just fell so happy about it, it already felt like Christmas to me ! And yes, I struggled to find chocolates to include in the pic because I ate most of the things they gave me. No shame though ! 😉

Bakers are keepers | Carrot cake with almonds

Hey everyone ! 🙂

I have a new kind of blog post for you today, mostly because I haven’t discovered anything special this week worth mentioning to you, because of how busy I’ve been since I went back to school. Just because I have millions things to do – including during the weekend- doesn’t mean I was not going to post this week. I just have to find a balance between the blog, my school work and my life.

Anyway, I thought I’d share a recipe I’ve been using a lot at the end of Summer because my family has been obsessed with it – I even had to bake it twice a week when my cousin came to our house with her little family. As I’ve mentioned previously on the blog (in my Liebster Awards tag if I’m not mistaken?), I love everything that has to do with baking. I find it fun because I always have music playing so I can dance and sing at the same time, relaxing because it represents a break from my stressful life and mostly happy because it always makes my family and friends happy when I randomly make them a cake. When they’re happy, I’m happy.

I thought I’d share this recipe because for some reason, carrot cakes remind me of Autumn. It’s probably due to their color, which is a brownish orange (if that makes any sense to you haha) and the taste, which I’d gladly describe to you if I didn’t suck at describing what something tastes like 😉 And if you haven’t tasted a carrot cake before and think ‘Bleh, I don’t like carrots, I’m not going to try it’, let me stop you right there. I hate carrots, except when they’re not cooked, so you can trust me when I tell you this cake does not taste like carrots. I even added the almonds to make sure it tasted more sweet than what it usually does, even though it’s still delicious without the almonds.

Let’s go into the kitchen !

130g of butter

100g of cream cheese

200g of flour

1 tea-spoon of baking powder

3 eggs

150g of brown sugar

1 tea-spoon of allspice

2 normal-sized carrots (I used three because mine were quite small)

40g of sliced almonds

Melt the butter in a saucepan.  In a bowl, mix the cream cheese with the flour, baking powder, eggs melted butter and brown sugar. Dust the allspice over and mix again. Once everything is fully mixed, grate your carrots and add them in before mixing everything. Finish by adding the sliced almonds and fold until it’s all mixed together. Pour your mix in a greased cake tin and put it in the oven for about 40 minutes. Let it cool down and enjoy ! 🙂

Feel free to add icing over the cake once it has cooled down but my family and I aren’t fans of icing as we find it too sugary and I usually end up with a headache because of all the sugar.
